Can you share an authentic southern/soul food cornbread recipe?
I really have an itching to learn how to cook southern food. I'm from the North and don't have a clue. Please give me an authentic recipe for cornbread like the type served at soul food restaurants. Thanks.

There are lots of different recipes, depending on what part of the South your recipe hails from. In Louisiana, for instance, I think the cornbread is sweeter and in Virginia you might be run out of town if you put sugar in your cornbread.
So, here is a recipe from one of the finest Southern cooks to have ever lived, Edna Lewis. Edna Lewis' history is as interesting as her food. If you are truly interested in real Southern cooking, Edna's books are a good place to start but it certainly isn't the end.

Authentic French Meringues
INGREDIENTS
4 egg whites
2 1/4 cups confectioners' sugar
DIRECTIONS
Preheat the oven to 200 degrees F (95 degrees C). Butter and flour a baking sheet.
In a glass or metal bowl, whip egg whites until foamy using an electric mixer. Sprinkle in sugar a little at a time, while continuing to whip at medium speed. When the mixture becomes stiff and shiny like satin, stop mixing, and transfer the mixture to a large pastry bag. Pipe the meringue out onto the prepared baking sheet using a large round tip or star tip.

Authentic Carbonara from those who have made it please?
When I was in Italy I had great carbonara, I have made a few recipes from websites, but none of them turned out the same. Does anyone have an authentic recipe they have actually used? Please no websites.

This is the greatest carbonara I have tried. It calls for Penne pasta but you can use any. It is from Giada de Laurentis, a great italian cook.
1 pound pancetta, diced into 1-inch cubes
Sea salt and freshly ground black pepper
6 eggs, at room temperature
1/2 cup heavy cream, at room temperature
1 1/4 cup freshly grated Parmesan
1 pound dried penne
4 tablespoons chopped fresh parsley leaves
Heat a large saute pan, until hot. Add pancetta and saute until golden brown and crispy, about 5 minutes. Season with black pepper and remove pan from heat.
