what is the differences between pure molasses and dark molasses?
i'm making a fruitcake and the recipe asks for dark molasses , but i only have pure molasses? Is there a difference of taste? Is it ok if i use pure molasses instead of dark?

I am a former chef and hate to be a pain, but molasses is molasses, sorry girls, there is unsulfured with has a lighter aftertaste, but if it is molasses it is the same taste and colour no matter what.
Anyone will do, molasses like honey keeps the cake moist for a long time, as the hydrate the other ingredients, I use them for Xmas cakes, Xmas pudding, in gingerbread cakes and cookies and when I worked in Jamaica we had a Jamaican Fruit cake with it and we soaked them in 100 proof rum for extra kick....(Answered by David H) |

How long is molasses good in the cupboard for?
I'd like to bake cookies but I know the molasses has been sitting in the cupboard for a while.

As long as ity has not started to re-ferment as that is the reminece of the sugar making process, if closed and kept cool, it can last quite a while, best thing to do is first smell it, does it smell moldy or like bread, is there a foam or bubbles when you stir it, if there is a smell of alcohol or vinegar, I would get rid of it.
It is not expensive and is best kept in the frig, there it can last forever, just make sure it is o.k before using it, I used it alot when I ...(Answered by David H) |

how can you make your own brown sugar without molasses?
I don't have molasses and no brown sugar so i can't go out and get some so does anyone have any ideas?

This is from Wiki: Brown sugar can be made at home by mixing white granulated sugar with molasses, using one tablespoon of molasses for every cup of white sugar (one-sixteenth or 6.25% of the total volume). Thorough blending will yield dark brown sugar; for light brown sugar, between one and two teaspoons of molasses per cup should be used instead. It is, however, simpler to substitute molasses for an equal portion of white sugar while cooking, without mixing them separately.
So, you really can't make brown sugar without Molasses, but you can just substitue regular sugar, it will taste different!...(Answered by Harleygirl) |
