For 1 cup, use 1 cup honey; or 3/4 cup firmly packed brown sugar; or 1 cup dark corn syrup; or 1 cup pure maple syrup. Looks like a few of use just plugged "molasses substitute" into Google. Google is a wonderful tool, and you'd get your answer faster for simple things like this than coming here. Good luck with your cake....(Answered by zynr)

Organic molasses. Im alergic to sulphur. If its unsulphured, is it free of the natural sulphur as well?
Im alergic to sulphur, and I recently brought a bottle of "Wholesome sweeteners organic molasses". It says unsulphured on the label, but the ingredients only say "organic molasses". If its unsulphured, does this mean that the natural sulphur is extracted from the molasses as well??? Maybe during the process of obtaining the molasses possibly?? Someone help me with this one. ... Unfortunately, "unsulfured" just means sulphur was not added. "Sulfur or sulphate free" means there is no sulfur in the product. I have no idea if molasses has naturally occurring sulphates like wine. I am also allergic to sulfur (not anaphelectic) and have no problem with natural molasses. But if you are anaphelectic, I wouldn't mess with it!...(Answered by debbi b)

I am a former chef and hate to be a pain, but molasses is molasses, sorry girls, there is unsulfured with has a lighter aftertaste, but if it is molasses it is the same taste and colour no matter what. Anyone will do, molasses like honey keeps the cake moist for a long time, as the hydrate the other ingredients, I use them for Xmas cakes, Xmas pudding, in gingerbread cakes and cookies and when I worked in Jamaica we had a Jamaican Fruit cake with it and we soaked them in 100 proof rum for extra kick....(Answered by David H)

As long as ity has not started to re-ferment as that is the reminece of the sugar making process, if closed and kept cool, it can last quite a while, best thing to do is first smell it, does it smell moldy or like bread, is there a foam or bubbles when you stir it, if there is a smell of alcohol or vinegar, I would get rid of it. This is from Wiki: Brown sugar can be made at home by mixing white granulated sugar with molasses, using one tablespoon of molasses for every cup of white sugar (one-sixteenth or 6.25% of the total volume). Thorough blending will yield dark brown sugar; for light brown sugar, between one and two teaspoons of molasses per cup should be used instead. It is, however, simpler to substitute molasses for an equal portion of white sugar while cooking, without mixing them separately. So, you really can't make brown sugar without Molasses, but you can just substitue regular sugar, it will taste different!...(Answered by Harleygirl)
