How do you get the stout fish taste out of catfish?
I cook fish often, but it seems that catfish is a more difficult fish than others to develop a predictable taste with (mainly grilled). Sometimes it has a great taste, then other times, there is a very harsh "fishy" flavor that overwhelms the spices and seasonings. I've heard of soaking the fish in hot sauce, but I don't know the specifics of how to do that. Any help is appreciated. These are blue cats, straight from the river. Well it depends on the catfish. farm grown fish usually has a less strong flavor. If you are trying to mask the flavor there is always southern fried catfish. take the filets and cover them with louisanna hot sauce and then roll in cornmeal then into the fryer....there is also blackened catfish my personal favorite. Thaw the filet in cold water then remove and let water run off and use a good blakening seasoning roll the filet in seasons and then put into a skillet (cast iron if possible) wait for skillet to smoke and then put in the fish. cook ...(Answered by biggdawg)

You could either glue or tape them to index cards. Or you could get a photo album with the plastic multi-photo pages. Just slip the recipe inside each slot, and label with the recipe name so you know what's in there....(Answered by GracieM)

Oh my god we are in the same situation! I have three kids under 4. I sit down when they are all in bed and think of all the dinners I want to cook this week and write out every ingredient. Then do the same for lunches, breakfast and snacks. Then make the list in order your grocery store has it layed out. Don't get anything not on your list, to make sure you do this go through and figure out how much it will cost add $20 and use cash, don't take any more cash than that and you won't ...(Answered by bailey8554)

Any way to fix recipe after adding too much cinnamon?
I followed the only peach butter recipe I could find, and boy it's overwhelming with cinnamon flavor, so much so you can't taste the peaches much! Is there any "fix" to reduce to the flavor? (I know, wishful thinking, right?) Thanks! ... (Asked by sassymom97)

The only way I know how to fix that is to make more peach butter. Make another batch without any cinnamon and when it's finished mix the two batches together. You'll cut the cinnamon flavor in half....(Answered by Peaches)

Why does my homemade tomato sauce come out tasting bitter and how can that be prevented?
I take several tomatos and put them in a blender, then drain the liquid and throw away the pulp formed by the seeds and tomato skin. I then boil the liquid portion in a pot for about 40 mins or until it thickens and becomes a paste. Before adding any seasoning I taste it and it has a bit of a bitter taste - nothing overwhelming but I could do without it. Is it normal for tomato sauce to have a bitter taste? sorry i dont have a set mash recipe but try adding cream and butter instead of milk and marge this is how they make it in restaurants also try adding some chives or a egg yolk to enrich the flavour dont forget plenty of salt and pepper most restaurants will use maris pipers these are the best all round potatoes that i know of hope this helps...(Answered by Jamie)

how can i add corn starch to sauces without getting that overwhelming flavor from it?
my boyfriend has been cooking stir fry chicken lately and despite his good intentions, we cannot seem to shake the overwhelming flavor of cornstarch. is he adding too much? if he does add too much is there a way to lessen the flavor or does he have to start over? what are some recipes we can try for a good sweet and sour sauce? ... A couple of things that you need to know: Corn starch must be mixed with a water first [its called a slurry ] before it can be added to the other liquids All starch thickened sauces must reach a boil before their full thickening power can be realized Add the slurry incrementally , return to a boil , check for sauce consistency , repeat as needed Your quality standard is that you shouldn't be able to taste the starch. longer cooking times help solve that problem. How can I organize my recipes to make meal planning & shopping as simple and pain free as possible?
I am a stressed overwhelmed mother of 4 and rarely have meals planned in advance. I have some good cookbooks, and I know there are excellent sources for recipes online, however, whenever I want to plan meals, I have to forage through the books and it takes soooooo long and I get overwhelmed. If you have 4 kids, then you have been cooking for awhile now. To start off easy, I would sit down and make a list of all the things that you have cooked, know how to cook, love to eat. Try to separate the list into catagories, such as soups, chicken, beef, egg, favorites and so on.
