POKE SALET (Polk Salad) Anybody know how to cook the stalks?
I have always just chopped them up with the leaves - boil them twice, dispose of water - and then cook them like regular greens. Now I have always heard about the stalks being rolled in flour (or cornmeal?) and fried and they taste like maybe asparagus? BUT should I boil them first or will the frying take out the poison? ... gone to long -- I have fried the poke stalks they taste more like fried green tomatoes than asparagus to me. I just pealed the stalks and cut them in about 3/8" slices rolled them in seasoned flour then dipped them in a batter made with milk and eggs and rolled them in a 1/2 -- 1/2 mixture of seasoned flour and corn meal and fried them in a deep fat fryer. Add a little more salt to taste while they are still hot. I suppose you could blanch the stalks before or after you slice them but I think ...(Answered by jim b)

It really doesn't matter, but it may cause all those valuable juices to leak out while you are cooking it. Thus creating dry chicken...your best bet is to try a brine/marinade. Soak the whole chicken or pieces in seasoned salted water (1c kosher salt to one gallon of water) for at least an hour. You can add any seasonings you desire (garlic, herbs, etc...) Then rinse chicken, season with pepper and a little salt...and bake it up. Brining makes the skin super crispy and the meat really juicy....(Answered by Little Miss Luscious)

Lookin recipe: yellow cake, poke holes in it, pour warm chocolate icing on top?
My grandma used to make this when I was a kid but she can't find the recipe now. It was a yellow cake (I'm sure just a mix). When it was done she would poke holes in it with the bottom of a wooden spoon. She would make a chocolate frosting and pour it over the cake while the frosting was still warm and it would sink into the holes in the cake. Any idea about how to make that frosting? ...
