What's the most environmentally-friendly way to get rid of food scraps?
We live in a foresty neighborhood where there are lots of critters running around: chipmunks, squirrels, mice, opossum, raccoons, foxes... My roommate says it's a bad idea to throw food scraps out into the bushes because a) it's bad to feed the animals and b) it'll attract rodents to our house and make them more likely to try to get inside. I feel so wasteful just throwing scraps in the trash. And we rent so we wouldn't be able to start a full-fledged compost pile. Ideas?

Composting is a great idea, and doable.
There are many different types of compost bins.
Even if you rent, your landlord would probably allow you the space to have a small barrell style composter.
In fact some metropolitan areas have programs where you can get composters from the city.

is it enviornmentally safe to burn laminate flooring scraps, should they be recycled or put in landfills.

The Laminates are made of MDF. Medium density fiberboard This is a health hazzard for your lungs when you cut it with a power saw.
Drawbacks of MDF:

Heavier (the resins are heavy)
Contains urea-formaldehyde which may cause eye and lung irritation when cutting and sanding
The glue that binds the laminations is made with formaldehyde. This is a toxic chemicle when burned and inhaled
Finally, any plastic layers (maybe the top surface) when burned, will produce cyanide gas. This gas is heavier than air, and can kill pets sleeping on the floor.

I'm overwhelmed by the paper in my life - lists, scraps, articles I've clipped. What can I do?
Are there any better systems for an information junkie like me? Why is it so hard for me to let go of paper? I know my life would be so much better if I could acknowledge that I don't have time to research everything and just get rid of all the notes, etc. I've tried to convert everything to PC but it's a huge project. Why am I sabotaging myself from having a great life by always having something that needs organizing and de-cluttering?

You just need to take the time to sit down and go through these
things. Make a pile of what is trash, a pile of keepsakes(which you
can put in a scrap book). A pile of important documents, a pile of
bills etc. maybe get a file cabinet with labeled folders to help you
get better organized. There are just somethings that you can't
throw away, I don't think there is anything wrong with that. Hope
