How long can I store home made marmalade for if I sterilise the jars and they are air tight? Thanks?

I've just opened a jar of Seville marmalade I made in Feb 06 and it's still fab. Standard recipe of marmalade... Jars and lids all put through the dishwasher's hot wash, then jars dried and sterilised in the oven and lids in bowls of boiling water then left to air-dry face down on a super-clean tea towel (the oven doesn't do wonders to the lining of lids!) I always use jam jars that have the pop-up button on the lids. Is there a fully automatic yogurt maker?
Keeping the innoculated milk warm for 12 hours is easy enough; I just keep it in my pre-warmed oven with the light on. All the yogurt makers I've seen appear to take over that task but require you to do the tricky part -- sterilizing and cooling the milk -- before using the machine. Would an uncooked "compote" made with non-sulfured dried fruit soaked in liquid need to be kept refrigerated?

need for refrigeration depends on when you are going to eat it, and how it was dried in the first place. If it wasn't dried with sulfur dioxide, then it was probably dried with sugar, salt or hot air. If you want to keep any prepared fruit product for more than a day, stick it in the fridge. But the high sugar content should slow down bacteria at room temp for planty of time. Always a good idea to keep it covered though. Oxidization is usally the fastest decomposer of fruit. I grew up making homemade jams/jellies with my mom and sisters/brother. Mom always used the recipe that came inside the pectin boxes...you can get pectin at any grocery store and I have even seen it at Walmart...The recipe for jams/jellies is essentially fruit, sugar and pectin....sterilize your jars with boiling water or you can run them through the dishwasher as that sterilizes them also...for jams and jellies the best size jars I have found to be the pint sized ones...You can seal the jars with parafin....that is how mom used to seal the jars but I have found that ...(Answered by cheri_da_rn)

Every year I make my own cranberry sauce with cointreau and every year I serve it on boxing day with a ham/pates and cheeses. People are so complimentary about it, I would like to make a few extra jars as gifts. However, I really want to do this today as we are going away for a few days. It will definitely keep. Just store it in the fridge until you're ready to give them out. I make a cranberry relish with Grand Marnier every year and it keeps for months in the fridge....(Answered by sassy n)

Best way to preserve or can butterscotch sauce without refrigerating?
I'm making butterscotch sauce for holiday gifts and am not sure how to can it. I thought if I just sterilized the jars and lids I could then pour the hot butterscotch sauce into them and seal them. I go ahead and give them the bath just to be sure. If you pour the napalm hot sauce straight into the jars I'm not really sure it's needed but what the heck, letting the jars 'cool off' in boiling water won't hurt the sauce<g> (my sauce is around 275 degrees when I jar it up). I've shipped unrefrigerated sauces like this many times throughout the years and haven't had any go bad yet!...(Answered by departed lime wraith)

If you Google the words: breastmilk butter - you will get results - for better or worse! http://www.recipezaar.com/53903 Interesting... And a little weird if I do say so myself... Apparently all you do is take a container of expressed breastmilk and shake it vigorously until it becomes... butter. i have a great recipe for pork and beans and it makes 10 - 12 portions. This is way too much for two people to eat in one sitting (if we did eat all of it I don't think anybody would really want to sit with us).What is the proceedure for canning them and do I need a specific size jar to do so? Yes you can can pork and beans but first you must purchase a pressure cooker/canner. The only FDA approved safe way for canning any food must be done by this method as the old fashioned boiling water canning methods are unsafe & could result in fatal botulism poisoning. Pressure cooker/canners are relatively inexpensive and pressure cooking is a fast, safe, and fun way of not only canning foods but also preparing meals in only about the third of the time it takes using conventional cooking methods (outside of microwaving).
