Is Corn Syrup suppose to replace sugar? or do you add them both in cookie dough?
ok, i had an old friend that made the best peanut butter cookies, they were soft, thick and chewy.and told me the secret was to add corn syrup. but he didnt tell me if he substituted the sugar, or if he added them together.
So I would like to know do i suppose to add the sugar and corn syrup, or just corn syrup? if i only add corn syrup. how much do i put in the batch?
the recipe calls for 3/4 cup of sugar. so if i suppose to subsitute, then how much corn syrup do i need.

just to let u know, the secret to chewy, moist cookies is to not over bake them, underbake them a bit and u have to melt the butter before adding it in to the cookie mixture...very important!!! here is a super recipe that i just adore! i promise it will be even better than the other one!
1 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
DIRECTIONS
Preheat oven to 350 degrees F (180 degrees C).

Can light corn syrup be replaced with a different kind?
I have a recipe that calls for about 3tsps of light corn syrup, but I don't really want to go out and buy it just for that. What could be used as a replacement? I have vegetable oil, olive oil, and canola oil. Would any of those do?

Nope - oils aren't replacements for corn syrup. 1 c sugar + 1/4 c water - boiled until the sugar is dissolved and thickens a little would be the only replacement I can think of. Naturally you don't need that much so cut it down to 1/2 c sugar + 1/8 c water. You could go a little lower by 1/4 c sugar + 1 1/2 T water - for that quantity, zap it in the microwave, giving it a stir as it boils. When baking cookies, what can you use in place of light corn syrup?
This recipe calls for 1/2 cup light corn syrup for 3 dozen cookies. But we've only got dark corn syrup. Is there anything I can use as a substitute for light corn syrup? And if not, is it possible to just leave the corn syrup out and instead adjust the time or oven temperature so the consistency of the cookies doesn't get all messed up?

LIGHT CORN SYRUP SUBSTITUTE
2 c. white sugar
3/4 c. water
1/4 tsp. cream of tartar
Dash of salt
Combine all ingredients in a heavy, large pan. Stir and bring to a boil. Reduce heat to a simmer and put cover on it for 3 minutes to get sugar crystals off the sides of the pan. Uncover and cook until it reaches soft ball stage. Stir often.
Cool syrup and store in a covered container at room temperature. It will keep for about 2 months. Makes almost 2 cups....(Answered by VIC) |
