you can pinch leaves any time at any age and they are potent. the plant will form 2 new branches from the base of leaves below the pinch. If you pinch off the taller branches you will get a bushier plant. I grow Jalapenos in my garden, every year. I enjoy eating them raw, making Salsa, as well as making my home-made "pepper sauce". My plants grow to be at least 4 feet tall. Mine are planted in the ground, and not containers. I apply "Miracle Grow",(liquid) at least 2 times a month, too. You can start picking the leaves from dill at any stage. If you are making pickles you will want to pick the seed heads before the flowers open or after they start making seed. But the leaves are very flavorful to use any time. As for the celantro I would think that as soon as they make leaves large enough to harvest....(Answered by Beth)
